Curry Chickpea Salad Sandwich

  • 2 (15 oz.) cans of chickpeas, drained and rinsed
  • 1/2 onion, finely diced
  • 1/4 cup and 1 Tbsp Vegenaise
  • 1/4 cup chopped celery
  • 1 tsp curry powder
  • pinch of cayenne red pepper, or to taste
  • 2 Tbsp Kosher dill baby pickles, finely chopped (optional)

1. Mash up chickpeas very finely in a medium bowl.

2. Stir in all other ingredients and mix well.Step 2

3. Serve with lettuce and tomato on toasted bread.Step 3
